For now, I'm off to have coffee with a long-time friend who's in town. Then, my sweet hubby and I (along with two of my fun siblings and spouses) are headed to a basketball game for the evening. Did I mention I'm loving Christmas break and my husband being home from school/work? I'm hoping to post lots of pictures over the next couple of weeks since I plan to tote my faithful Nikon camera everywhere with me...including the beautiful, sunny California beach we are heading off to in just a few days. (I've never been so excited about taking pictures before!)

One of these days, after all the hustle and bustle of holidays is over, I'm going to pull out my sewing machine, dust it off, and start sewing again. I promise.

Random Thoughts and Links

It's been a busy week and with Christmas right around the corner, I know it's only going to get more busy! I was out grocery shopping today and was shocked at seeing so many people piling their carts a mile high...until I remembered that, after all, Christmas is this week. Time has flown by so fast... It seems like it was just Christmas 2008 and I was being courted by the man of my dreams. Marriage seemed like a far away dream. But, a year later finds me married to that amazing, wonderful man, enjoying our first Christmas season as a married couple, and anticipating our 5 month anniversary. God is so good and truly does give us far beyond what we could ever ask or think if we just wait for His timing! I'm so grateful to Him for all He has given to me this past year.

Loyalty to Christ

Loyalty to Jesus Christ is the thing that we "stick-at" today. We will be loyal to work, to service, to anything, but do not ask us to be loyal to Jesus Christ. Many Christians are intensely impatient of talking about loyalty to Jesus. Our Lord is dethroned more emphatically by Christian workers than by the world. God is made a machine for blessing men, and Jesus Christ is made a Worker among workers.

The idea is not that we do work for God, but that we are so loyal to Him that He can do His work through us - "I reckon on you for extreme service, with no complaining on your part and no explanation on Mine." God wants to use us as He used His own Son."

Christmas Cookie Baking Day: Final Part

The Ritz Cracker Cookies didn't turn out as well as I hoped because the melted chocolate kept sticking together. But I got enough good ones to use for something. This is a super easy recipe. Basically you make peanut butter sandwiches using Ritz crackers and peanut butter. Dip the "sandwiches" in melted chocolate and let them harden in the refrigerator. My family has made these cookies for Christmas parties and get-togethers for years and people always love them.

After I was finished with the Ritz Cracker cookies, I finished decorating the Sugar Cookies. I ended up using this frosting recipe from Allrecipes.com. The final result didn't look to much like a Christmas cookie, but I figured since Christmas is about celebrating Jesus' birthday, these would just be "birthday" cookies! They are super yummy and I'm not sure they're going to last long with my husband around.Here is the final list of all the cookies I made today:

Hopefully, I should be stocked up with enough cookies to last through the Christmas season! My kitchen is all cleaned up (yes, I made myself wait to this post until it was completely cleaned) and I'm anxiously looking forward to giving my back a rest. It's been a productive day here! Christmas Cookie Baking Day: Part 3

Oh. My. These cookies are heavenly! They are even better than I expected. If you like lemon, you should definitely make a batch of these. We are huge lemon lovers so I added in lots of extra lemon peel and they are very lemony. But if you just followed the recipe, you probably wouldn't be able to taste the lemon flavor that much. I'd love to try these without the lemon peel or with another substitute as I'm sure they'd be just as good.
Lemon Angel Wings - from Taste of Home magazine

1-1/2 c. all-purpose flour
1 c. cold butter
1/2 c. sour cream

1 tsp. grated lemon peel (I put in at least 1 Tbsp.)
10 Tbsp. sugar, divided

Place flour in a large bowl; cut in butter until crumbly. Stir in sour cream and lemon peel until well blended. Place on a piece of waxed paper; shape into a 4-1/2-in. square. Wrap in plastic wrap and refrigerate for at least 2 hours. Cut dough into four 2-1/4-in. squares. Place one square on a piece of waxed paper sprinkled with 2 Tbsp. sugar. Cover with another piece of waxed paper. Keep remaining squares refrigerated. Roll out
dough into a 12-in x 5-in rectangle, turning often to coat both sides with sugar. Lightly mark center of 12-in side. Starting with a short side, roll up jelly-roll style to the center mark, peeling paper away while rolling. Repeat rolling from other short side, so the two rolls meet in the center and resemble a scroll. Wrap in plastic wrap and refrigerate. Repeat with remaining squares, using 2 Tbsp. sugar for each. Chill for 1 hour. Unwrap dough and cut into 1/2-in. slices; dip each side in remaining sugar. Place 2 in. apart on foil-lined baking sheets. Bake at 375 degrees for 14 minutes or until golden brown. Turn cookies over; bake 5 minutes longer. Remove to wire racks to cool.

I also finished the Peanut Butter Blossoms from the Hershey's website. These, as usual, are delicious and one of my favorite Christmas cookies.

The Sugar Cookies are ready to be frosted. I just need to make up some frosting. But I have a confession. We have no food coloring...and no red or green sprinkles. And another confession - I don't even have any Christmas cookie cutters. So, I'm doing round cookies with white frosting and colored sprinkles (that look more like birthday sprinkles than Christmas sprinkles!). Oh well! When you live on a $22-per-week grocery budget, you just get used to things like that. Hopefully, they'll taste so good that no one will care!

And while I'm making the frosting, I'm working on my favorite Ritz Cracker cookies. I'll post pictures and the recipe later.

Christmas Cookie Baking Day: Part 2

The Lemon Angel Wings have finished the first round of chilling. I rolled them up and stuck them back in the refrigerator for another hour. So far, they look like they are going to be a hit. I think the way that you roll these up is quite interesting. You'll have to wait to hear more details until later when I post the recipe.Next, I started on another new recipe called Walnut Horn Cookies. Except I tweaked them...to Oatmeal Horn Cookies as I substituted oatmeal for the walnuts. (My husband doesn't like nuts PLUS we didn't have walnuts!) I used my nifty little grinder to grind up the oatmeal and it worked wonderfully. This is actually the first time I've ever used it since receiving it as a wedding gift back in August.
They actually didn't turn out too bad considering I substituted out the main ingredient! I've posted the recipe below this picture.
Walnut Horn Cookies - from Taste of Home magazine
1 c. plus 1 tsp. butter, softened, divided
1 pkg. (8 oz.) cream cheese, softened
3 c. all-purpose flour
4 c. ground walnuts (I substituted oatmeal instead)
1-1/4 c. sugar, divided
1/2 c. 2% milk
1 tsp. vanilla extract
1/8 tsp. salt (I omitted)

In a large bowl, beat 1 c. butter and the cream cheese until light and fluffy. Gradually add flour, beating until mixture forms a ball. Divide dough into four portions; roll each into a 12-in circle. Melt the remaining butter. In a large bowl, combine the walnuts, 3/4 c. sugar, milk, vanilla, salt and melted butter. Spread over circles. Cut each into 12 wedges. Roll up wedges, starting from the wide ends. Place point side down on greased baking sheets. Curve ends to form crescents. Bake at 325 degrees for 35-40 minutes (mine only needed to cook for 25 minutes) or until lightly browned. Remove to wire racks. Place remaining sugar in a small shallow bowl. Roll warm cookies in the sugar.

THEN, I started in on Sugar Cookie dough. This recipe from Allrecipes.com has a fabulous rating so I thought I'd give it a try. What do you think? Now for a frosting recipe...does anyone have any suggestions?While the Sugar Cookie dough is chilling, I'm going to begin working on Peanut Butter Blossoms. I'll be back later!

Christmas Cookie Baking Day: Part 1

My morning went a little different than planned, but isn't that the way life always is? Even so, it's finally time to begin my Christmas Cookie Baking Day! I've turned Christmas music on, donned my lovely apron (that I received as a wedding gift), pulled my hair back, and made my list of cookies to bake. I'm getting ready to make up the dough for the Lemon Angle Wings - a new recipe that looks scrumptious. Since it has to chill for 2 hours, I thought I'd start on this one first.

Coming Tomorrow: Christmas Cookie Baking Day

I've been wanting to bake Christmas cookies for quite some time now. In fact, I've been stocking up on ingredients for a few months now. With my husband in the thick of finals right now, this week seems to be the perfect time. So, tomorrow is the planned day.

Throughout the day tomorrow, I plan to be posting updates about my Christmas Cookie Baking Day, along with pictures and possibly some recipes. I'm trying a few new recipes so we'll see how they turn out. In the mean time, I'd enjoy getting to hear about some of your favorite Christmas Cookie recipes.

The Little Fireplace

Cold, winter evenings like tonight remind me of so many memories...memories of sitting by the fireplace as child, listening to the crackling and feeling the warmth. Of cuddling up with a blanket next to our fireplace, listening to Christmas music and staring at the glistening lights on our mantle. Of "camping out" with my siblings next to the fireplace where Mom would read us Christmas books before we fell asleep.So many winter memories involve the little fireplace in our living room. Hardly a cold evening went by without someone building a fire in the little fireplace. Winter events at our house were always complete with a fire. And on snow days, the handful of ashes under the fire became a heaping mound. I even remember the Christmas when the oven was so full with other food there wasn't a place inside for the Challah bread to rise - so the fire in our little fireplace came to the rescue. (The bread turned out wonderfully, by the way!)
The little fireplace is still being used. Just not by me.

As I sit here typing, I'm listening to Christmas music ("Chestnuts roasting on an open fire...") and enjoying the glistening lights on the tree. But I'm wishing I could curl up next to the fireplace with my blanket, some hot cider, and a good book.

Instead, I'm off to go make Chili and my Mom's famous Butterhorn Rolls. Maybe a bowl of steaming chili will warm me up.

It is always such a huge blessing and encouragement when people write us. I consider it a double blessing when I get emails like the one I received a few days ago:

Why do I consider it a double blessing? Because we shipped Yolanda's "I Can Sew" booklets just a few days after we started offering them in our store. And she wrote us just a few days after that! It means so much to hear that the time we took to make a product available was worth it. Thank you, Yolanda!

Of Guitars and Such...

My wonderful husband serenaded me with his classical guitar today. I got a few photo shots as he was playing. Okay, well maybe more than just a few... but he didn't seem to mind. :)

Story of a Christmas Tree

Joe surprised me yesterday and took me out to purchase a Christmas tree. I was elated as this was something I had been looking forward to ever since we got married!

We discovered that we were going to have to make our own hooks for the ornaments since we didn't have any on hand. My creative husband got to work...using paper clips.
