Strawberry Soup/Smoothie recipe

What's more refreshing on a hot summer day than an ice-cold fruit smoothie?

I've been enjoying my blender this summer. A few days ago, I remembered a recipe for Strawberry Soup that I used to make for lunch on hot days. Once I had the thought in my head, I could almost taste it. I had to make that soup again.

So I pulled out my recipe and started dumping the ingredients into the blender. When it was finished, I took it outside. You can't drink an ice-cold smoothie and thoroughly enjoy it unless you're sitting outside in the hot sun, right?
Chilled Fruit Soup

1 bag frozen strawberries
1 tbsp. vanilla
1/4 c. sugar
3/4 c. yogurt
1/4 c. sour cream
whipped cream

Blend thawed strawberries in food processor or blender until smooth. Add sugar, vanilla and sour cream. Blend very well, then blend in yogurt. Serve in chilled compote dishes. Garnish with whipped cream and a slice of strawberry. Serves 6.


It is definitely a very refreshing treat on a hot summer day! (And a bit healthier than ice cream!)
